Description

A gluten-free product, which can be used both hot and cold and guarantees a mirror-like appearance even after freezing the finished products (up to -20°C). Extra Dark Chocolate Mirror was created specifically to create a mirror-like appearance for: Bavaroise, mousse, ice cream, and other types of pastries.

Through its glossy finish, you can give your cakes a very elegant appearance. Another advantage of this glaze is that it can be used on inclined surfaces, covering perfectly without forming unattractive pieces.

It is very important that the surface on which the mirror is applied is covered with a gelatin-stabilized cream.

For use hot or cold, semi-prepared product for professional use.

Ingredients: chocolate 43% (sugar, cocoa), glucose-fructose syrup, water, sugar, modified starch, coloring: caramel gelling agent E440, acidity regulator: E334, preservative: E202, flavors. The product may contain traces of milk.

How to use:

Take the desired amount and heat it in the microwave (400-500W) or in a double boiler until 45-50°C. Stir gently with a spatula, without incorporating air. The dessert placed on a rack is covered with this mirror, moving it slightly for an even application. The mirror glaze can also be applied without heating, but can be lightly mixed with a spatula.
